Shepherd’s pie soup recipe

Ingredients:

    • 1 lb ground lamb or beef

    • 2 carrots, diced
    • 2 stalks celery, diced
    • 3 cloves garlic, minced
    • 4 cups beef or vegetable broth
    • 1 cup frozen peas
    • 2 tablespoons tomato paste
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • Salt and pepper to taste
    • 2 cups mashed potatoes (store-bought or homemade) for topping

  1. Cook the Meat: In a large pot, brown the ground lamb or beef over medium heat until fully cooked. Drain any excess fat.
  2. Add Vegetables: Add the diced onion, carrots, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are tender.
  3. Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
  4. Combine Ingredients: Add the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Mix well to combine.
  5. Add Broth: Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes.
  6. Add Peas: Stir in the frozen peas and cook for an additional 5 minutes.
  7. Serve: Ladle the soup into bowls and top with a generous scoop of mashed potatoes. You can either mix the mashed potatoes into the soup or leave them on top for a classic shepherd’s pie presentation.
